Tasmanian salmons live in deep cold water of Tasmania. The geographic feature gives their flesh a red autumn leaf colour with rich flavour. Compare to other salmons, it is more red and  flavourful. Tasmanian salmon is also known as one of the most expensive salmons in the world. 

We combine Vietnamese ingredients and cooking methods with Tasmanian salmon to bring you an Oriental Western gourmet.

 

Salmon Gravlax

Marinated Tasmanian Salmon slices with beetroot and dill accompanied with boil potatoes, grain mustard salad and dark rye bread.  VND 330,000++

The Tasmanian Tartar

Finely chopped Tasmanian salmon marinated with fresh lime juice, fish sauce and lemongrass served with rice crackers and fresh herbs. VND 350,000++

From Stream To Steam

Steamed in banana leaves Tasmanian Salmon fillet marinated with chili, lemongrass and coriander roots, served with fresh herbs and jasmine rice. VND 500,000++

Thinly sliced Tasmanian Gravlax Salmon, rau muong (morning glory), roasted peanuts, kinh gioi leaf, tossed with fish sauce and lime dressing, topped with sesame seeds.  VND 240,000++

Salmon Papillote

Oven roasted Tasmanian Salmon fillet in a sealed parchment foil with white wine, cherry tomatoes, Kalamata olives, capers, tomato sauce and fresh herbs.  VND 550,000++
