APPETIZER
House smoked and marinated Gravlax Norwegian salmon, accompanied by crispy root vegetables and fennel orange salad tossed with a Horseradish reduction.
Or
Duck foie gras terrine set on a pan brioche and pan fried duck liver with arugula lettuce set on caramelized onion and juniper sauce.
Or
Poached Canadian Lobster tail served on a light saffron reduction and asparagus. Served with black quinoa salad.

SOUP
Wild forest mushroom cream soup. Drizzled with truffle oil.

MAIN COURSE
Pan fried and oven roasted fillet of Alaskan Cod fish set on roasted baby leeks. Served with white bean white beans simmered with cream and salmon caviar drizzled with shell fish oil.
Or
Grill flamed 120-day Australian beef tenderloin served on truffle mashed potato. Served with Black trumpets and Chanterelle mushroom compote drizzled with rosemary juice.

DESSERT
Chocolate Lava cake with vanilla sauce and raspberry coulis.
